Squishy Spinach Quiche!

Ingredients
¨ 9’’ Pie Crust
¨ 1 Onion
¨ Fresh Mushrooms
¨ 2 Cloves of Garlic
¨ 1 Tablespoon of Butter
¨ 1 Tablespoon of Olive Oil
¨ Thyme Leaves
¨ ¼ Cup of Chicken Broth
¨ Fresh Spinach 1 bag
¨ 1 cup Shredded Parmesan Cheese
¨ 1 cup/ 1 Package sliced Swiss Cheese
¨ 1 cup Feta Cheese
¨ ¾ Cup Whipping Cream
¨ ½ Cup Sour Cream
¨ 4 Eggs
¨ 1 Tablespoon of Flour
o Optional:
§ 1-1½ Cups of Chicken, Bacon, etc.
§ 1 Tablespoon of Dijon Mustard

1 Preheat Oven 375°
2. Bake Pie Crust for 7-9 Minutes until light golden brown; set aside to cool.
3. Sauté chopped onion, mushrooms, and garlic in butter and olive oil until tender in a medium saucepan.
4. Add thyme, chicken broth, (and chicken)
5. Cook this mixture over medium heat until liquid evaporates stirring frequently.
6. Place mixture in piecrust evenly.
7. Sprinkle 1/3 cup of Parmesan Cheese, Feta Cheese, and Swiss cheese over mixture evenly.
8. In medium bowl, place cream, sour cream, eggs, (mustard), and flour and beat well with whisk until combined.
9. Pour into pie shell carefully. Using the tip of the knife, make holes in filling so that the egg mix goes to the bottom.
10. Sprinkle the remaining cheeses on top.
11. Bake for 35-45 minutes, or until golden brown. Cool for 5 Minutes before cutting.
